Vegetable Curry

Feeds 3 to 4
1/2 green pepper
1 small potato
1 1/2 cups of frozen peas
1 small onion
1/2 of a head of cabbage
1 cup frozen, cut carrots
14-ish oz can coconut milk
2 tablespoons Patak’s Original Mild Curry Paste
1 cup rice
2 cups water
First cook the rice, since it always takes the longest. When it’s done, just cover it up with a lid so it stays warm.
Cut potato into 1″x1″ to 1″x2″ cubes and boil in one pot, then in another, boil the carrots and peas. And in one final pot, boil the cabbage.
When the potatoes are cooked to that “perfect for eating” softness, drain them, the cabbage and the carrots and peas.
Add half of the can of coconut milk to a large frying pan on medium high. When the coconut milk starts to bubble, promptly add the curry paste. Stir the coconut milk and the paste until everything is mixed well in the pan.
Right after you do this, add all of your vegetables (potatoes, carrots & peas, cabbage, and raw onions and peppers). Lower the temperature on the pan to a medium to a low-medium-high.
Add the rest of the coconut milk and stir it into the mixture very well.
You can let the sauce reduce down a bit, but not too much because the sauce is excellent when it’s mixed with rice. I typically stir the mixture for 3-5 minutes so the onions and peppers cook in well.
Put the rice on plates and top with the vegetable curry.
Serve warm.

Friday, May 29th, 2009It’s funny how greatly horses change and how much they, in fact, don’t change. I went back to the barn today after a week and a half hiatus… after a 5 to 6-month-long hiatus while I was exploring parts of Europe and, though intending to take photos, got the chance to ride as well.
This horse that I rode, Grey Horse, is such a good horse to practice on when it comes to similarities with my school’s horses. I remember more than two years ago, I would ride this horse in an English saddle all the time – especially when I was prepping for college riding. What’s funny is that when I got on Grey Horse, rode him around a little bit, and made sure I wasn’t doing anything stupid, I totally remembered all of his buttons and how to make him go around without being a TOTAL brat. I mean, he pretty much was 99% brat, but he was being good, not spooking at anything, and basically just being the Grey Horse. It was honestly like those two, plus, years that I’ve been away elsewhere didn’t even happen – that’s how much I feel back into the swing of things.
And here’s when that deja vu gets even more weird: when you feel like you’ve missed nothing at all and everything feels like it’s already happened, but then see these horses that were just being broke or that attitude problems, or whatever, suddenly become a new horse. I really, honestly didn’t recognize some horses because they rode and behaved A LOT differently than they did – or they were about to burst with a now-due foal. But when someone said “Oh, that’s ‘so-n-so’” I would think “WHAAAAAAAAAAAT?”
And I’ll tell ya what, riding Grey Horse today was great! I only had my western boots and no half-chaps that fit me, so I rode with only my boots and my jeans and had the crap pinched out of my calf. I got pulled out of the saddle a couple of times and had to use a good amount (basically all) of my upper-body strength to keep Grey Horse from putting his head in between his knees (he likes to do that, I guess…). It’s been a long time since I’ve had a ride like that, since I’ve felt like that. And though that raw spot on my leg really stings right now, it’s one of those things that’s bringing back a lot of good memories!
